The Terroirs

>

Fine Wines of Pinot Noir and Chardonnay.
Situated on a rare volcanic terroir composed of black basalt, this vineyard offers ideal conditions for cultivating Chardonnay and Pinot Noir. The mineral richness and natural freshness of the soil enable slow grape ripening, fostering wines that are precise, complex, and remarkably fresh. Derived from massal selections of old Burgundian vines, these grape varieties express here a purity and unique character, enhanced by the tension and minerality typical of this high-altitude terroir.

>

Fine Wines of Sauvignon Blanc and the Rosé.
This clay-limestone terroir of marine origin, dotted with fossils such as Ostrea Crassissima oysters, perfectly suits grape varieties like Sauvignon Blanc, Cinsault, and Grenache Gris. These soils impart a beautiful tension to the wines, with subtle floral aromas and an elegant mineral structure.
Overlooked by the chapel of La Peyrière, the vineyard enjoys a unique environment that lends a fresh, delicate, and historically rich signature to the wines from this parcel.

>

Fine White Wine from the Picpoul de Pinet AOP.
Nestled on the heights of the Picpoul de Pinet appellation’s hillsides, the terroir of La Serre is characterized by its red ochre, highly mineral soils and its expansive view of the Mediterranean Sea. The sea breezes play a vital role here, naturally cooling the vines during ripening. This temperate climate combined with the rich soil produces wines with pronounced floral aromas, a lively tension on the palate, and a distinctive character that sets these Picpouls apart from the more classic expressions of the plain.

>

Fine Red Wine Cabernet Sauvignon.
On this Villafranchian gravel plateau, the Cabernet Sauvignon achieves remarkable balance. The clay-limestone soil, combined with a stony structure, promotes deep rooting and natural water regulation. The old vines, over 30 years old, yield concentrated grapes that give rise to dense, silky wines with beautiful freshness. These cuvées have an outstanding aging potential, allowing the wine to gain complexity over the years while retaining its purity.

>

Amfòra, orange wine and Pet’Nat’ (natural sparkling).
The Amfòra range, named after the Occitan word for amphora, draws inspiration from ancient winemaking techniques using amphorae, echoing the Roman ruins at the foot of the old oppidum overlooking our vineyard. The wines are naturally vinified with gentle maceration and extended aging in terracotta amphorae, allowing for continuous micro-oxygenation. This method highlights the texture, tannic finesse, and the most authentic expression of the grape, while preserving the varietal’s aromatic integrity.
Natural wines

>

The Basic Instinct range embodies the purest, most natural expression of our vineyard. These wines are crafted without added sulfites or oak aging, highlighting the fruit’s purity and the distinctiveness of the terroir. Fermented with native yeasts, they reveal straightforward aromas and a balanced structure. The goal of this range was to capture the wine’s most natural instinct, without any added inputs. Surrounded by trees and hedges, the vineyard fosters rich biodiversity, contributing to the vines’ natural health.

>

The Infusions are natural wines made with gentle, short macerations—hence the term "infusion"—without added sulfites or oak aging. This approach produces elegant wines that are low in alcohol, with soft tannins and refreshing crispness. Ideal for aperitifs or light meals, these wines charm with their approachability and finesse.
Special vintages

>

At the end of October, we harvest our grapes, richly laden with sugar, which then give birth to our Diamant 13 lot — a unique blend of thirteen grape varieties cultivated across our diverse terroirs. This fully ripe harvest naturally concentrates the sugars, producing a balanced wine with expressive aromas of candied fruit, citrus, and white flowers. Inspired by the southern tradition of the thirteen desserts, this wine is both complex and bright, perfect to enjoy as an aperitif, alongside delicate cuisine, or paired with fruity desserts.

Our Pet’Nat’ is a pure and natural expression of our expertise. Crafted using the traditional method, it ferments in barrels without filtration or disgorging, delivering fine bubbles and lively freshness. This sparkling wine features aromas of citrus and white fruits, with a slightly brioche-like finish. Its generous format is perfect for serving by the glass or at festive events.
